INSTAGRAM ROUND-UP + WHOLE 30 UPDATE

Happy, happy Friday! I thought I would do a little Instagram round-up for those of you who don't follow me on there and still want to shop my outfits. Make sure you are following along @mollys_musings, because I often share looks that don't always make it to the blog! Now on to my #Whole30 re-cap. I am officially on day 19 WHOOP WHOOP, and I can't believe I only have 11 days left. You can read my first #Whole30 re-cap here. I am officially in the Tiger's blood phase and I truly have been feeling amazing. At this point, it really doesn't seem challenging to eat this way and my energy level has increased dramatically. That's not to say that I don't crave desserts or sweets, but they are definitely manageable. My eating habits have honestly been very boring and I have been sticking to the same meals over and over mostly because it is easy.

For breakfast, I typically have a couple hard boiled eggs and some fruit. Let me let you in on a little secret, buy the pre hard boiled kind at the store. It will literally save you a bunch of time and they are perfect and cheap. I bought some #Whole30 approved sausage to make this casserole this weekend as a treat. I also have a glass of cold brew coffee mixed with my homemade almond milk. It is seriously SO delicious and I am thinking I will continue drinking this after the process is over. I love my Starbucks iced coffee with vanilla syrup and cream, but this tastes so close without the guilt. You can find the recipe for my almond milk here.

For lunch I have been having leftovers from the night before or a salad. The salad I have been loving is simply mixed greens, cucumber, tomato, hard boiled egg, avocado and a dressing of olive oil and balsamic vinegar.

For dinners, I have been sticking to some sort of protein + veggies + Lacroix with lemon and lime juice. I did branch out and make lettuce wrap tacos this week. I used lean ground beef seasoned with taco seasoning that didn't have any sugar (found it at Harris Teeter). I served it in bibb lettuce and garnished it with fresh salsa (no sugar added) + avocado and Franks Red Hot sauce. It was SO good. I also have been using my spiralizer a lot. I love to make zoodles and top it with ground turkey and spaghetti sauce (I have this spiralizer and love it, it was definitely worth the $30). We also made spiralized sweet potatoes and roasted them in the oven and they were delicious ( I used this recipe).
